The Speciality Coffee Association of Europe (SCAE) represents the heart of the coffee community, where thousands of coffee professionals and enthusiasts can share their wealth of knowledge and experience with one another in a forum designed to facilitate innovation, education, research and most importantly, communication.
Everything we do at SCAE surrounds Inspiring Coffee Excellence. This is our vision to take speciality coffee out to the world, to re-educate consumers on this most fascinating beverage for the benefit of every level in the supply chain, whilst helping to ensure the long-term sustainability of our industry.
We're also very proud to be associated with our partner charity, Coffee Kids, who's dedicated programme enables them to work throughout Latin-American coffee-farming communities, creating projects in a number of key areas, such as education, health care and economic diversification.

WHAT IS THE COFFEE DIPLOMA SYSTEM?
alt The SCAE Coffee Diploma is an education system aimed to meet the needs of coffee professionals everywhere. It is a controlled and certified system with a curriculum written and updated by the best minds in the coffee industry. It allows the coffee professional to sit courses and certifications at locations and times of their choosing, amassing credits each time a certification is successfully passed that count towards the full Coffee Diploma.

SCAE 對於咖啡文化最重要的一環就是提供各式咖啡相關技術與精品豆品質的完整認證制度,藉由確立嚴謹的選豆與沖煮標準,讓每一杯香醇的咖啡得以在每一位愛好者手中完美的呈現,然而 SCAE 的教育體系,是為了各地專業咖啡人士所量身打造的。課程品質都經過控管以及嚴謹的設計,同時也不斷地更新課程大綱以求最新知識以及技能。認證課程以及考試包含了實務操作與基本常識。只要合格修習完任ㄧ課程即可累積學分。

To achieve the full Coffee Diploma, 100 credits or more are required.
The Introduction to Coffee module earns 10 points. Foundation level earns 5 credits, Intermediate earns 10 credits and Professional earns 25 credits. The Foundation level requires no previous experience. It is recommended that before attempting the Intermediate level you have some experience of working in the field. Extensive relevant experience is recommended before attempting to take the Professional level and it is compulsory to complete the Intermediate level for those wishing to pursue this higher level.

概要:針對咖啡師零基礎設置。學成後你要能校正咖啡磨豆機,並按標準製作espresso和cappuccino。 |
課時預估:半天至一天。 |
1.01 咖啡豆 製作espresso流程; 萃取不足、萃取過度、正常萃取分別表現的特點。認識風味平衡、好的crema 視覺呈現。 通過對磨豆機的微調改善espresso萃取- 時長控制在20-30秒。 1.05 牛奶技術 懂得使用新鮮牛奶的重要性; 牛奶衛生的重要性; 達到奶沫質感標準; 牛奶溫度技能; 蒸牛奶步驟; 懂得製作cappuccino和caffe latte的傾倒技巧。 1.06咖啡師菜單 Espresso準備、製作及服務流程; Cappuccino 準備、製作及服務流程。 1.07 衛生,健康及安全 知悉當地有關咖啡機使用的衛生、安全法律法規。 演示準備咖啡時有關衛生、安全的相關操作。 1.09清潔、維護&排障處理 日常清理咖啡機、磨豆機和蒸汽棒的重要性; 演示磨豆機的日常清理; 演示咖啡機的日常清理。 |

概要:測試高級技能和咖啡背後的專業科學知識。預估學員基礎(一年以上的咖啡師工作經驗+一定的管理經驗)。學成後應當對原料及操作技巧有深刻理解,同時能管理其他咖啡師出品及提供優質服務。能對機器設備做日常保養。 |
課程預估:兩至三天。 |
3.01 咖啡豆 對使用拼配豆/單品豆豆種、產區、處理法的認識 對咖啡烘焙度的認識; 了解不同豆種拼配出的口感、風味差異; 了解萃取參數的變化對咖啡(不同豆種、產區、處理法、烘焙度)風味的影響; 理解幾種不同的去咖啡因方法; 理解新鮮度對萃取率和意式濃縮風味上的影響; 理解不同咖啡包裝法對咖啡新鮮度的影響; 認識到天氣及環境狀況對咖啡新鮮度的影響。 3.02 工作區管理 分析咖啡館佈局—如何確保速度、效率、工作流程順利,避免顧客堵塞。 |
